I wasn’t a big fan of soya chaapuntil I got married. I never tasted soy products before marriage. My husband and in-laws are extraordinary devotees of soya chaaps. They go to market and bring back home different assortments of chaaps as baked chaap, afghanichaap and so on. This is out of the blue that I attempted my hands in making soya chaaps at home. The scent of the masalas or flavors was magnificent and it taste excellent too.
This mouth-watering and tempting dish can also be tried at home. When you can grill it at home then why order form restaurant?

Ingredients –
Soya chaap:   1/2 kg
For marinating:
Thick curd: 250 gm
Salt: to taste
Red chili powder: 1/2 tsp
Jeera powder: 1/2 tsp
Garam masala: 14 tsp
Coriander powder: 1/2 tsp
Dry mango powder or amchur: 1/2 tsp
Kasoorimethi: 1/4 tsp
Haldi powder: 1/4 tsp
Ginger- garlilc paste: 1 tsp
Chaat masala: 1/2 tsp
Oil: 1 tbsp
Oil: for grilling
1. Take thick curd in a bowl. Add all the spices and oil and mix well.
2. This is the marinade for soya chaps. Leave soy pieces in this mixture for at least 4 hours. If you them overnight, nothing better than that.
3. Grease a baking tray and place these marinated chaps over the tray. Drizzle a little bit of vegetable/olive oil to avoid the chaps getting stuck on to the tray.
4. Grill them for approximately 15 to 20 minutes or until they turn crispy and golden brown.
5. Keep tossing and turning over medium flame, till it turns golden brown.
6. Place the chaps on the serving plate and serve with mint sauce.

Recipe 2
1.  5 sticks (180 gms) Soya chaap
2.  1/4 cup Curd
3.  1 cube Cheese (8 gms, grated)
4.  1/2 tsp Black pepper powder
5.  1/2 tsp Garam masala powder
6.  1 tsp Chaat masala powder
7.  2 tbsp Oil
8.  Salt
For the marinade:
1.  1 inch Ginger (grated)
2.  4-5 Garlic (peeled and grated)
3.  to taste Salt

Method –
1.      Wash and dry all soya chaap sticks. 
2.      Spread ginger and garlic paste on the sticks. Keep it aside for better marination. 
3.      In another bowl, mix hung curd, salt, pepper powder, red chilli powder, garam masala and other spices. Add cheese and mix well. Cheese is optional.
4.      Marinade the soya chaap sticks in the batter prepared 
5.      Cover and keep it in the fridge for 1-2 hrs.
6.      I use the following two methods to cook the sticks:
7.      A. Heat a heavy bottomed pan or tawa and apply oil all over it. Keep the soya chaap sticks on the tawaand cook it on each side for few minutes. Cover the chaps with lid for few minutes while still on flame. However, you can also use convection and grill mode of the microwave to make these. First set the convection mode, preheat at 180°C and then let it bake for about 12-15 minutes. Then choose the grill mode for 5-7 minutes and grill the sticks by rotating them.
8.      Serve hot with green mint chutney and some drops of lemon.
